Wheat Berries (Slow Cooker Method)

1 cup wheat kernels

3 cups water

1 tsp salt

 

Rinse the wheat berries well with cold water and drain.  Place them in a slow cooker, add water and salt (for every 1 cup of berries use 3 cups water).  Cook on low for at least 6-8 hours, or overnight.  Make sure your mixture stays wet while cooking.  Kernels should be chewy with some kernels broken open when done. Drain any remaining water. Use or store in refrigerator.  You can use wheat berries in soups, breakfast cereals, as snacks, in casseroles, etc.  We’ve even made wheat berry tacos that were surprisingly tasty!

 

Apple Cinnamon Wheat Berries

4 cups Wheat Berries (chilled)

2-3 cups apples (cubed)

1 cup almonds

4 Tbsp Honey

4 tsp Cinnamon

1 Tbsp water

Mix wheat berries, cubed apples, and almonds together in a large bowl. Add honey, cinnamon, and water (as needed) and mix well. Serve cold or warm. My kids love to add milk and eat it like cold cereal. You can also add it to yogurt along with any other toppings like nuts, seeds, or fruit.  (Makes about 7 cups)
